Helle Harding Rubin Knife - Limited 2026 Edition

The Helle Harding Rubin (Ruby in Norwegian) celebrates the history of the Harding knife, with a striking limited edition version for 2026 (it's 40th, Ruby anniversary). Incorporating the red ruby colour in both the handle and the sheath adds new flair and striking visibility to the updated design.

The handle pattern from the traditional Harding has been changed slightly to incorporate more layers, adding complexity and changing the visual profile of the knife, and in honour of the occasion, Helle dove deep into the wood-storage vault and found spalted beech from 1986 – the year that the first Harding was made. (Spalted wood is wood infested with fungus. This fungus in turn changes the structure of wood, altering the color and complexion in the process).

This creates beautiful, patterned, multifaceted wood. Helle then stabilized it and cut it into two cross-sections (cross-cut) that fit perfectly between pieces of newer, stabilized beech (Kebony).
